  1. Heat the olive oil in a large, wide frying pan over medium heat. Add the sausage chunks and cook for 2–3 minutes until browned. Remove and set aside.
  2. In the same pan, add the spring onions and mushrooms. Cook for 3–4 minutes until softened. Stir in the crushed garlic and fry for another minute.
  3. Add the cherry tomatoes, baked beans, and browned sausages back into the pan. Let everything simmer for 20 minutes until the sausages are fully cooked and the flavors meld together.
  4. Make four wells in the mixture and carefully crack an egg into each one. Cover the pan and let the eggs steam for 6–8 minutes, or until the whites are set to your desired consistency.
  5. Sprinkle a little sweet smoked paprika over the eggs, crumble over the feta cheese, and serve straight from the pan. Garnish with fresh parsley and enjoy warm!
