  1. In a bowl, mix salmon, dill, and olive oil. Season generously with black pepper. Set aside.
  2. Sprinkle sea salt over the cucumber ribbons and leave for 30 minutes. After 30 minutes, squeeze the cucumber dry using a clean tea towel or muslin.
  3. In a saucepan over low heat, warm the sugar, vinegar, and bay leaf until the sugar dissolves.
  4. Remove from heat, add the cucumber, and let it sit while you prepare the bread.
  5. In a bowl, mix mashed potatoes, melted butter, flour, and salt. Shape the mixture into a flat round disc that fits your frying pan.
  6. Heat a little oil in a non-stick frying pan over medium heat.
  7. Fry the potato bread for a few minutes on each side until golden brown.
  8. Remove from heat and slice into 4 triangles.
  9. Spoon the salmon mixture onto the warm potato bread.
  10. Serve with the pickled cucumber on the side.
  11. Sprinkle with a pinch of cumin and extra salt, if desired.
