- In a bowl, beat the eggs with a pinch of salt and black pepper.
- Add a splash of vegetable oil to a large non-stick frying pan and heat over medium.
- Pour half of the egg mixture into the pan. Lay two slices of bread on top, then quickly flip them to coat both sides in egg. Cook for about 2 minutes, until the underside turns golden brown.
- Flip both slices, then:Sprinkle half the cheese on one slice. Layer two slices of ham over the cheese. On the other slice, add lettuce and tomato.
- Fold in any edges of the cooked egg around the bread. Then, carefully flip the cheese-covered bread onto the other slice, forming a sandwich.
- Slide onto a plate and repeat for the second toastie.
- Serve immediately while warm and crispy!
