  1. Preheat the oven to 180°C (160°C Fan) / Gas 4. Spread almonds on a baking tray and roast for 12 minutes, stirring halfway. Let them cool for 10 minutes—this prevents overheating the food processor.
  2. Transfer the cooled almonds to a food processor.
  3. Scrape down the sides occasionally to ensure an even texture.
  4. The process takes 7–15 minutes, depending on your food processor.
  5. Add a pinch of salt and blend briefly to mix. (Optional). Transfer to a sealed jar and store in the fridge. Use within 2 weeks for the freshest taste.
